Countless "traditional" recipes for them exist, but any old pancake recipe will do, including prepackaged pancake mix and concoctions beginning with cake mixes. Shape defines ebleskiver, not ingredients, and only an ebleskiver pan delivers. Safe on gas or electric stovetops, this one is made from heavy cast aluminum so it won't warp. And it's nonstick, to make flipping the pancakes easy and cleanup a snap. (For authenticity, turn ebleskiver with a knitting needle.) Its wood handle stays cool and adds a rustic touch. There's a notch on the handle's end for hanging on a hook or peg. --Fred Brack

Delicious ebelskiver!
Using the old recipe and this new aluminum pan the ebelskiver were perfekt the first time. Use caution to use lower heat than your old cast iron ebelskiver pan. We've now tried a few old recipes including chocolate-filled which are delicious snacks when out for a ski.

Trusted Brand.
Nordic Ware is a trusted brand in my household and this did not disappoint. I do think it is a bit overpriced. I put a tiny drop of olive oil in each compartment and wiped it around with a paper towel as the pan was heating up on my old-fashioned electric range. It cooked perfectly. Cleanup is warm/hot sudsy water with a dish rag. After it is dry I place it in a cloth bag to prevent scratches.

One Perfect Pan, A Thousand Perfect Puffs!
The Cadillac of pancake puff pans. Non-stick beyond belief. I literally clean it with a paper towel and I'm done. The puffs turn over so easy, they just slide over. I turn them with the tip of a fork. Browns the puffs perfectly. Puffs NEVER stick. Quick, even heat--pan heats up quickly all over, not just in certain spots. I bought this pan to make pancake puffs for my son, who saw the commercial and was begging me for the "set". So, I figured why not get a professional-grade, serious pancake puff pan? I learned its proper name--the Danish Ebleskiver Pan, and then scoped out the pancake ebleskiver pan a.k.a. pancake puff pan market and they all ran around $30 and up, so this was a great deal. Plus, I figure Nordic Ware is a good name, so I bought it. I bought this pan my 7-year-old son, a budding chef, in mind, and gave it to him as one of his early Christmas presents, along with an adjustable chef hat. It made an adorable gift ensemble, and together, my son and I have enjoyed our pancake puff adventures ever since--me, manning the pan and him breaking the eggs donning his professional-grade chef hatChef Works CHAT Chef Hat, White . I am soooo happy with this pan. It has made my life easier and making my son's food so much more fun because he requests pancakes daily and this pan performs: pancake puffs are effortless with this pan. The puffs are just little balls of the perfect pancake--fluffy on the inside and browned-just-golden on the outside. I guess you can even inject them, but I haven't really felt the need to, just the plain puff is so darn good. They don't even need syrup, somehow. I have tried sprinkling them with powdered sugar, though--mmmmm, divine! I experimented with various ingredients--I made the standard puff, then I dropped a few chocolate chips on the puffs, which made sort-of choco-puffs, which are addicting--if I don't watch out I may turn into a pancake puff! I even found a neat website that lists all the B&B's favorite muffin recipes! In case you are wondering--you can adapt any muffin recipe/mix and make it as a puff. Just drop a teaspoon of the muffin batter in the pan and it makes a puff, not a muffin. You can even use your fav brownie recipe/mix. So, any muffin/brownie recipe out there can be a puff--imagine the possibilities... I've yet to try a pizza puff, but it's on the horizon. Lastly, it's a great pan if you have super-picky kids. My son's a uber-finicky eater, but I'm thrilled to report that whatever is in a "puff" form just seems so much less intimidating, and so much more appealing to him. We even made hush puppy puffs!!! He loves them!!! Buy this pan, and whatever the puffs--I'm sure you'll agree--this is the pan to make them in.

Nordic Ware rocks
I have a few Nordic Ware products and they’ve all stood up well to their uses! This is just the same. Good quality, American made cook ware. Was excited to see they made this version of pan! Thanks Nordic Ware! Recommend this product and the brand. Happy with Nordic Ware!

Interesting addition to cooking equipment.
A good non-stick coating, a comfortable weight of pan. Just cleaned with a paper towel and some hot water. I use it on a gas hob. Made several batches of ebleskiver successfully. I recommend finding an on-line video of how to make them, they do require a bit of practice , especially getting the batter to the right consistency so that you can make the spherical shape.. Delicious end product, children and adults like them. I am going to experiment with savoury versions and mini potato pancakes to see how they work.

Nordic soul food for a Christmas brunch, a lazy weekend, ....
... or anytime. I did not expect this lightweight pan to work on my glass top stove but it works very well. Not sure why these spherical pancakes taste so good nut they do. A worthwhile purchase.

Surprised how much we like this pan
I would never have bought this for myself. My husband bought it for me as a Christmas present after teasing he was going to buy me "a frying pan" (Going along with the gag, I bought him a cast-iron ridged griddle for steak, heh). I'm actually glad he did, even though the pan looks initially like it's a frustrating only-one-use gadget. I'm happy to say we really like using it. I made successful ebelskivers the first time using a recipe from150 Best Ebelskiver Recipes . The second time was even better. The third time, I used a basic chocolate-batter recipe from the book and added my own fillings (sweetened mascarpone, Nutella, and brandied cherry sauce) to make "Black Forest Cake" ebelskivers, which everyone loved. I am going to try to use some leftover rice today to make either arancini or calas (recipes not in the book, but can be found online and adapted), and later on use some polenta, cheese, chilies, and leftover pork roast to concoct tamale-style ebelskivers. The pan has a non-stick coating made for sweet and starchy foods. It releases the food very easily when used with a little oil or butter as the recipes suggest, and wipes nearly clean with a piece of kitchen roll. Cleanup is a quick wipe with a slightly soapy sponge and a brief rinse once the pan has cooled. I used this pan on a gas hob and on a solid plate hob with equal success.
