The folks at Norpro know this, too; they've included two replacement wires with this hardwood cheese slicer. The wire installs very easily and quickly into the clean lines of the coping-saw-like handle, but do yourself a favor: stick to unaged Cheddar and other semi-firm cocktail-party varieties.
