ADVANTAGE OF FRESHLY GROUND SPICES There are many benefits to freshly grinding pepper, salt, herbs and spices for cooking and seasoning. A quality mill with a specifically designed grinding mechanism will release the aromas and essential oils of that spice. HOW TO CHOOSE A GOOD MILL When looking for a pepper, salt or spice grinder, consider the following: Grinding mechanism: Choose a grinding mechanism that can withstand daily use: one that is well made and produces a consistent grind. Ideally, the grinding mechanism should be designed to handle a specific spice, as each spice has different physical characteristics that will benefit from different design features. HISTORY OF PEUGEOT Peugeot's story starts in the 19th century when the Peugeot brothers converted the family's gristmill into a steel foundry. IT'S ALL ABOUT THE MECHANISM The primary difference between Peugeot and all other brands are the spice-specific mechanisms. For each spice, there is one - and only one - Peugeot grinding mechanism, each made of the ideal design and constructed from the best material available for its intended use. All Peugeot mechanisms are made in France and carry a lifetime limited warranty. Peugeot's Pepper Grinding Mechanism is a two stage burr-style system. During production, the helix-shaped grooves and grinding teeth of the pepper mechanism are individually cut before the steel is case hardened to make it virtually indestructible. The mechanism is then given a proprietary treatment to provide additional protection against corrosion. During use, the helix- shaped grooves guide whole peppercorns through the mechanism to crack, then grind to a consistent size by a double row of teeth. This process releases the pepper's essential oils, resulting in more flavor and aroma for your dish. This patented mechanism is found on every Peugeot Pepper mill and is widely considered the best pepper mechanism available Peugeot's Salt Crushing Mechanism features two ribbed plates which work to fracture and crush coarse, dry sea salt to a consistent size. A PEUGEOT INNOVATION u'Select is Peugeot's patented grind control system for electric and manual grinders. Beyond personal preferences, different stages of the preparation / cooking process and different dishes often call for seasonings of varying sizes. Peugeot now offers the ability to quickly, easily and accurately adjust the grind settings with its patented u'Select system. From coarsely ground pepper or salt to very fine, u'Select offers: -6 pre-defined levels of grind for pepper, or any point in between. -6 pre-defined levels of grind for salt, or any point in between. Simplicity: just turn the ring at the base of the mill and select your grind size. The further you turn the ring, the finer or coarser the grind, depending on the direction turned. Precision: no risk that the grind will change during use. The right grind: You are assured that with each setting, the grind will be consistent, time after time. FINE OR COARSE GRIND-IS IT JUST A QUESTION OF TASTE? Actually it depends on personal taste and the dish being prepared. While personal taste plays a role, some dishes call for coarse salt or pepper, whereas others require either or both to be finely ground. A finer grind will be used for a delicate sauce or mixed raw vegetables and a coarse grind for grilling a steak or when making heartier meats and dishes. ANATOMY OF U'SELECT MILLS These mills feature the innovative u'Select system. u'Select mills have the same renowned grinding mechanisms, beauty and functionality as classic Peugeot mills with an additional feature of easy grind selection. When you want to adjust the grind of your salt/pepper to more coarse or fine, you simply turn the u'Select ring at the base of the mill. You can select one of six pre-marked positions, or any point in between, for infinite possibilities. Your selection will not move or change until you want it to. Manual Mills For best grinding results: hold the mill body steady and turn mill top in a clockwise direction only Electric Mills Press the Power switch to grind pepper or salt. Light will illuminate underneath mill when power switch is pressed. u'Select Ring:The narrower the wedge, the finer the grind. WHICH PEPPER AND WHICH SALT CAN BE USED IN PEUGEOT MILLS? Pepper: To get the best results, we recommend you to use only dry, hard, whole peppercorns that are 5 mm (1/4") or less in diameter. Black, white and dry green peppercorns can be ground in Peugeot pepper mills. Pink peppercorns can be ground only if in a blend (max 15% pink) with one of these other peppercorns. Dried coriander seeds are also suitable for the pepper mechanism. Salt: To get the best out of your Peugeot salt grinding mechanism, you should use: dry salt, ideally with a diameter of 4 mm (0.16") such as coarse sea salt or rock salt (salt mined from an underground salt seam). Do not use your Peugeot salt mill for grinding pepper or any other spice, or damp sea salt (also known as grey salt, Guerande, Re, etc.) The moisture content is so high in damp salt that it will corrode the mill. Use a Peugeot Wet Salt mill with a mechanism specifically designed for damp salt. Its shape and materials have been designed to resist salt corrosion.

Excellent product, Poor packing
We have several of these Peugeot mills for our home and love the ease of refill and use, grind levels and the smaller size of th emill (vs 8 inch). However they were shipped full of salt with the magnet lids (Great for easy refill) were not taped so they dumped every salt crystal in the shipping box which meant we paid for product we could not use and will now need to add our own salt and pepper.

A design and engineering marvel for the dinner table: best salt mill I've seen
Peugeot Daman u'Select shaftless salt and pepper mills are simply the best-designed, most functional and highest quality *engineered* items I have ever seen of their type. They make all of the several pepper and salt mills we previously owned seem like toys or junk. The Peugeots approach instrument quality for the purpose of grinding salt and pepper, and they are also attractive and easy to use. Several features make this an outstanding salt mill: * The adjustable stainless steel grinding mechanism -- different from the pepper mill mechanism, specially designed for grinding salt crystals -- really works. Firstly, it delivers very consistent size grounds at any setting. Secondly, it is easy to produce salt from a very fine powder to very coarse by turning the adjustment ring on the brushed stainless steel-encased plastic base to any setting through its 270 degrees of movement. The official product photos here on Amazon show accurately how well these mechanisms are made, and how well they work to produce a range of grain size. * The shaftless design is a superior concept. Traditional salt mills have a full-length shaft, to which the barrel cap and turning knob are attached by a top nut, through the middle of the unground salt crystals. As they are turned, the square-section shafts often used tend to create powder residue by abrading the salt crystals before they reach the grinding mechanism. That cannot happen in this shaftless Peugeot design. * The thick-walled barrels of almost crystalline acrylic are both attractive and functional. The salt crystals are displayed in a column which is both an attractive feature and a constant indication of remaining contents, unlike traditional turned wood units. Although smoother than turned wood models, the barrels of the units are easy to hold because they taper in at the middle, and flare out top and bottom. The entire clear acrylic barrel acts as a knob for turning the mechanism with one hand, while the other hand holds still the stainless steel base. * Refilling the mills is far easier than traditional shaft-drive models in which a top nut must be unscrewed, the cap/turning knob removed, and fresh salt crystals poured into an often small space around the top of the shaft. These shaftless Peugeots have a stainless steel-encased plastic refill cap held in place in a recessed fill hole by four small button magnets. It is easy to lift off the cap, and to refill the mills without spillage. Very highly recommended. The pepper mill counterpart of this salt mill, thePeugeot PM25441 Daman U'Select Shaftless 8.25 Inch Pepper Mill, Stainless Steel is its perfect companion, sold separately on Amazon. Although packaged in sets by some Amazon Marketplace resellers and other retailers, Amazon's lower shipping costs of the individually purchased mills are far cheaper for international orders. The shorter 6½-inch version of this model,Peugeot Daman 6.5 inch Acrylic Salt/Pepper Mill Set - U Select would be equally attractive despite needing to be refilled more often.

Mill seems fine, but shipped with loose salt
I purchased the Peugeot "Daman" 21 cm salt mill to match our Daman model pepper mill. The mill arrived naked inside an open-topped plastic bag, with its red booklet attached. About a quarter cup or so of rock salt was in the same bag, and fine salt coated the mill exterior. The plastic bag with mill and loose salt was cushion somewhat inside the Amazon box with air pillows. The mill's magnetic top was in place. Some of the salt had escaped the bag and was loose inside the Amazon box. Because the salt clearly could have been contaminated, I threw it all out, including a small amount in the mill. I'm unsure of what I was supposed to receive, but it certainly wasn't the mess I got. I dusted the mill and filled it with my own salt and it seems to be working fine. Can't help but wonder if this was a returned item.

Before you junk it
Bought this salt grinder in 2013 because I liked the Peugeot pepper grinder so much. Both have great design and are easy to fill being shaft free. The salt mill worked fine until recently when each twist produced less output and created inconsistent grain sizes at different settings. Emptied the salt and cleaned out the interior with canned air. Better, but not like new. Consulted Amazon reviews to see if others had similar problems; even visited the Peugeot site but it was in French. Got pretty frustrated and felt tempted to junk it and even started looking at other grinders.In a last ditch effort, I cleaned it again and proceeded as before but this time with one difference: I folded up a paper towel, removed the cap from the unit and turned the mill upside down and gently tapped the top on the towels to dislodge any salt. To my surprise, about a half tablespoon of powdered salt mixed with whole crystals fell out from their hiding place in the grinding chamber in the silver base! More canned air and when the base turned easily, with no abrasion, it was clean. Refilled with super coarse Himalayan salt and it worked good as new.

Knock-off?
Either a pretty good knock-off or a multipack that’s been broken up to sell individually. Arrived in a cheap plastic bag with rock salt spilling everywhere. This is the 2nd delivery I’ve received (returned the first one, thinking it was a returned item sold at full-price) and both were exactly the same. So far seems to work ok, but I’ll be scrutinizing its performance thoroughly. Unacceptable that a $65 salt mill should be sold in such condition.

Pretty, but not well made
I have purchased 4 or 5 of these salt grinders since 2008. The pepper grinders hold up great (I have 4 of them -- for 5-pepper ix, black, green & white pepper and one in reserve in case one breaks!). The salt grinders are not good. I've used sea salt in them & they always clump up, and get to the point that they only produce 'salt dust'. The turn mechanism to select the grind (fine -> coarse) eventually wears out, and it doesn't make any difference how you have it set. I thought Peugeot was a premiere manufacturer...... guess for cars, not kitchens! I do have another salt grinder by Peugeot that is wood, and it still works fine. But I had wanted a more modern look, with easier access to refilling. Now, the access is for emptying and un-jamming the darn mechanism. Warranty? Yeah, sure ... who keeps the receipts or wants the hassle of returns? These are WAY too expensive for the disappointing way they have worn out.

Special extras not expected
I like the ability to choose how fine or granual I can make the grind. Also, no more guessing which is salt or pepper as the shakers are clear. When refilling, no more unscrewing the top as it uses three earth magnets that keeps the tops fixed. An unanticipated surprise was when we decided to try another type of salt - pink sea sat crystals vs white salt. It's become quite the conversational piece when hosting dinners with friends.

Best pepper mill ever!
I discovered these mills while on a cruise and was impressed. As soon as we got back I tracked them down and bought a salt and pepper mill. Because they are adjustable you apply the salt/pepper to just the right granularity. Personally I prefer pepper ground coarse and this is the only mill which I have found does this consistently.

Poorly packaged
I expected the item to come in a box. It did not. This rather expensive salt mill came in a small broken plastic bag and the salt that was supposed to be in the mill spread in the bag. Can't tell yet how good this salt mill is but the packaging can be better.
