The Breville | PolyScience Smoking Gun Pro hand-held food smoker is ideal for quickly cold smoking meat, fish, vegetables, desserts, beverages and classic cocktails in just a few minutes. Smaller and more versatile than an outdoor hot smoker, it's the perfect alternative for adding big, smoky flavor and aroma with very little effort. No soaking of wood chips or cooking food for hours for that smoky flavor. Cold smoking gently infuses a measured amount of natural wood smoke to enhance flavors without cooking or preserving foods, or changing textures or temperatures. With enhanced performance and greater longevity, the Smoking Gun Pro's 1-inch 18/8 stainless steel burn chamber loads easily and holds more smoking material than the previous model. The easy-turn dial allows total control over airflow and smoke intensity. No electricity required. It's battery-operated for portable, versatile use anywhere, both indoors or outside. Compact and lightweight with integrated stand for comfortable, single-handed operation. The 17.5-inch silicone nozzle extender hose places smoke with precision. The device works with a variety of wood smoking chips, teas and spices, hay, dried flowers, and herbs. Approved for commercial use, the cold smoker is perfect for professional and home chefs, as well as mixologists. Smoke salmon after plating, serve smoked cheese or butters, cherry tomatoes for salads, sauces, chocolate, meringues and fruit in a flash. Elevate bartender classics to modern interpretations such as smoky Negronis, Old-Fashioneds. Simply fill the burn chamber, light the combustibles, and apply the smoke to the food or beverage. Includes replacement smoke screens, wood chip sample pack (1/2-ounce each apple and Hickory flavors), 4-AA batteries, complete instructions, and 1-year manufacturer. Works if you trust other consumers on youtube more than the instructions
The unit was promised in stock with 2 day delivery. It is Thursday ie 4 days later when the unit arrives. I guess no one keeps their word any more. Of note, this company elected to use AMAZON delivery which is currently grossly incompetent. That....does not however detract from the rating of the item, but needs to be born in mind if for example the item is supposedly a gift for someone else. This unit is very difficult to light. I ended up lighting a tea candle first then repeatedly taking flame from the candle to the unit using a wooden skewer. There was no desiccant pack added to the wood slivers when there should have been so that these would stay DRY. Put the wood slivers on a saucer and spray them with a spray or two of cooking oil. Dont get them soaking but just with some fuel on them to burn that is not damp wood slivers. Put the wood slivers in the appropriate place in the unit. The instructions say to only cover the mesh in the reservoir with the wood slivers. When I did as instructed, the unit did not work. A friend looked up what others were doing and they were filling the reservoir 1/2 to totally full. The wood slivers are not packed down but loosely added so that there are air pockets between the tiny wood pieces. If you use as little wood as the instructions say, then the wood is burned very quickly and essentially NO smoke goes down the hose and into your food. After you fill the wooden reservoir, wash and dry your hands. NEVER light a flame with any type of oil on your hands as it could ignite. You will need long wooden skewers OR a long lighter. DO NOT try to light this unit with simple matches. You could, but why do it this way when long wooden skewers or a long lighter are safer. Of those two methods I would suggest using a long lighter because then you dont have a flaming wooden skewer involved. I strongly suggest plastic wrap over the food and / or to have the food in some storage container. I placed the food in the bottom of a container with a click lock type lid AND covered the food with plastic wrap. You will be blowing smoke under the plastic wrap and then covering the click lock container with its lid and clicking it closed and sealed. This does generate a good deal of smoke if you use 1/2 to 1 times the reservoir area of wood slivers. Though it is said that you can do this in the house, I STRONGLY suggest you do this outside. Step out of your door for a moment and use this item. THINK carefully as to what you are standing on. IF smoldering ask gets blown from the unit if you overfilled it, it would be bad if a wooden deck is beneath your feet. Dont overfill the reservoir and dont stand on a wooden surface to do this. So your outside and your unit is lit. Smoke your food. Click that closed and carry it inside IMMEDIATELY. You dont need to attract animals to your smoked meat. After about 10 minutes, put it in the fridge unless your planning to use it right away. Remember food safety so dont leave meat out to go bad. Remind your children that this item is to be used only with permission and adult DIRECT supervision. Since you will be working with flame, this is a good time to double check that your fire safety equipment is up to date. I lit the smoke gun in the house. IF you put enough fuel in the reservoir it actually does make a great deal of smoke. It was not enough where anyone was coughing or having to leave the room and did not set off the smoke alarms. I did turn on my oven fan. Using it outdoors works MUCH better but ...if the weather is awful out there you could work with it right under your stove hood. I suggest you turn your stove hood on high. IF your fire alarm detectors are smoke based as opposed to heat based, you may consider disabling the one in the kitchen WHILE you smoke the food HOWEVER you MUST remember to turn your smoke detector back on afterwards. Use your judgement. If your smoke alarm goes off every time you fry something, then it will need to be disabled. If you cook dinner, fry foods, boil water with steam coming out of the pot with no problem from your smoke alarms, you are likely to be fine re your smoke alarm system if your stove hood fan is on high and you are under it. This unit emits smoke. If anyone in the home has asthma or COPD and they have trouble being around cigarette smoke, campfire smoke etc, do NOT use this with that person in the room. The motor on the unit could be a bit stronger as much of the smoke comes out of the top of the hopper as opposed to down the hose, but ... you dont want the motor SO strong that it blows the flame out. I am upgrading my review from a 1 based on using the instructions to a 4 based on imitating other you tube users. The unit does what it says it will do....albeit with problems with instructions and damp wood slivers.

Nice kitchen accessory if you really need it but definitely overprised.
It adds great flavour to your food and drinks. Easy to clean when new but after couple of use, the burn chamber and the steel net gets burned oil from the wood chips and then it becomes difficult to clean. The smoker is definitely very overpriced.

Must buy if your a Chef!
Amazing! Used this product many years ago when it was first launched by poly science. Absolutely as amazing as I remember. I've used many knock offs and none come even close. Flawless

Superb Quality
I have other Breville items and they are all super nice quality and this is no exception. It's easy and intuitive to use. Uses batteries, so be prepared. The smoke quality is terrific and works perfectly for the cold smoked items I've tried it with.

So much smoke!!!
I used this specifically for smoking drinks, incredible amount of smoke and extremely great flavors from the smoke. Couldn’t have asked for anything better than this. High grade materials used, simple to clean, easy to adjust flow you are needing. I’ve also used it for cheese and meats as well! Again couldn’t have had better results! Great product.

Party or dinner gathering sophisticate, this will mke you shine
I bought this gadget impulsively after a food contest show on one of those late night cooking show contests, as a possible joke gift for my wife who is a very sophisticated cook. I "spared no expense" (aka Jurassic Park) and got what was reviewed as "the Best". What we got was an impressively packaged gadget that my wife immediately liked, then loved as we began to test it. We have a major smoker and use it a lot, but it takes time, obviously, and ingridients. This tool does not try to smoke a piece of salmon or steak,...rather INFUSES smoked taste to the food already on the plate. It works. And it's mighty fun to demonstrate if/when we ever get to gather in a party/dinner environment
